Eggs a la Niege - like Snow Take the whites of 6 eggs which will be enough for a dish. Whip them till they get thick have some milk boiling over the fire in a large stew pan poach several spoonsfulls of the whites in it & when done enough drain and dish them next make a sauce to pour round them in the following manner, take some of the milk in which you have poached your eggs, then put a little sugar a little rose or orange flower water & a little Salt & mix the yolks of four eggs with the sauce stir the whole over the fire till the milk is made thick put it through a sieve & mash & pour it round the Niege Short Crust 1/2 lb of butter 1/2 lb of flour two Table spoonsfull of white sugar & 1egg
