To Dress a Calves Head Turtle Way
Take as many ye bones out as you Can, take pork & Slice it & Lay it at ye bottom of the pann, & putt in the Lights, then put ye head in, 1 Quart of Clarrett, 3 pints Water or little more Thyme and Sweet Margorum pepper, Salt Mace Cloves and Cyann, fry ye heart & Liver, Tongue & Brains and boyl them a little pork & fry it, & a little Ketchup or Walnutt Gravy & mix it wth the Brains.
to make an Apple pudding
Take five Large apples & five Eggs stew the apples in a Glass of Rosewater and brade them take bout 2 onuces of butter a little beat Cinnamon and grate the Rine of Lemmon and Sweeten it to your taste.
Ginger bread
Take 4 lb flour 1 lb butter 2 lb 1/4 sugar 1/4 of ginger 13 eggs leave out 1/2 whites 1 oz Carriway Seed & some Rose Water.
To make plain Cake
take 6 lb flour 1 lb butter 2 1/2 lb sugar 14 eggs 3d [worth?] [illegible] 1 quart milk 1 Nutmeg 1/4 oz mace 1/4 oz Cinnom mix butter with ye milk and 2 or 3 spoonfulls wine [illegible] some rose water.
