49 into spring Water they will look yellow & stink, but you must not mind that have ready your preserving pan take them out of that water & put the Pan Cover them well with Vine Leaves fill the Pan with spring water Set it over a Charchoal Fire Cover them close & Let them Simmer very Slow Look at them often & when you see them turn quit of a Fine Green take off the Leaves & throw them into a Large then into a Coarse Cloth 4 or 5 Double when they are Cold put them into a Jarr have ready
