43 your Sirrup made of Double refine Sugar in which Boil a Great Deal of Lemon Peel & Whole Ginger pour it over them & Cover them down close do it 3 times pare your Lemon very thin. & cut them in Long Bits about two inches long the Ginger must be Boiled in water before it is Put into the Sirrup. N.B Take Long Cucumbers Cut them in half scoop out the Inside do them the same way they Eat very fine in mince Pyes or Puddings or Boil the Sirrup to a Candy Height & dry them on Seives & it will Answer the End of Citren. 1766
