Brandy, 2 ditto of cream. Orange marmalade [illegible] twelve pounds of oranges take 15 pounds of sugar clarify it with the whites of two eggs, then cut skins off in quarters, take a little of the white out of the inside, then cut them in thin chips boil them in water till quite tender, take the [white inside?] and scrape it & take out all the seeds. then [put?] the chips, & pulp to the sugar and boil [it?]
