Chutney Sauce uart vinegar, 2 oz mango or apple, 2 oz tamarind, 12 oz raisins, 2 oz cayenne, 2 oz sugar, salt 4 oz, 2 oz garlic & 2 oz ginger. The cayenne & ginger are to be pounded & sifted the other ingredients are to be separately beaten into a pulp. All are then to be gradually mixed together & [illegible] vinegar slowly added
