A good way for plumb Cake Take 1 1/2 lbs of flour, one of sugar, & one of butter, 6 eggs, half a pint of yeast, 4 lbs of currants, half a pint of milk a teaspoon full of pearlash, a nutmeg & other spice to your taste. Beat it well & raise it before you bake it. Another way Five pounds of flour, 3 do of sugar 2 1/4 of butter - 3 lbs of currants, half a pint of cream, half a pint of rose water, 1/2 pt of wine & brandy 1/2 pint of new yeast beat it well together & let it rise over night, put in the currants just before it goes into the oven, let the wine & rose water be just warm Election Cake To 5 lbs of flour add 2 of sugar, 1 1/4 of butter, no eggs, but raise it with yeast Another good way 5 lbs of flour, 1 1/2 of sugar, 3/4 of butter 5 eggs & half a pint of yeast, Ginger brandy & seeds - mix it soft with milk
