Preserves &c To preserve Strawberries. Take very large strawberries not too ripe, hull them, and select the largest and finest Weigh them and to every lb of berries, allow 1 lb of Sugar, and sprinkle half the sugar over them and set them away. Then take the inferior berries, and those over ripe that are left and mix with the remaining sugar, mash all together, put them in a tin pan, set them over the fire in a pan of boiling water till they become a thick juice; then strain it through a bag, put it in a kettle, boil and skim it, until the scum ceases to rise, then put on the whole strawberries, with the sugar in which they have been laying, and all the juice which may have exuded from them. Set them over the fire in the syrup, just long enough to heat them through. Take them out, spread them on flat dishes to cool. Take off the scum which may arise, from the additional sugar. Repeat this several times till the berries are quite clear, They must not be allowed to boil. When cool put them in glass tumblers or jars.
