To make a sponge for three loaves and a pan of rolls. 4 Medium sized potatoes, boiled in three pints of water and when perfectly soft rub thru a coarse sieve into the water in which they have been boiled. into this put flour sufficient to make a thick batter then add the East-one Cake Compressed yeast, or if home-make yeast one large cupful. put this in a warm place and let it stand all night if made of home made yeast - and if of the compressed yeast make up in the morning and let it stand three hours.
