Ice cream. 1 qt sweet cream, made very sweet with sugar, & flavoured; whip to a light froth; skim off as fast as it is beaten, & put into your freezer, until all is whipped to a light froth. You will find it will freeze in less time than any other recipe. The above will make 5 qts delicious [cream?] Lemon Cream. Make with boiling water 1 qt good lemonade; Make it sweet. Strain it, & put in a stewpan over the fire. Add the yolks of 8 eggs beaten, & stir until of the proper consistency if you wish to mould it, add a little dissolved Isinglass at a time; or leave in a dish or glasses. Parisian mode of roasting apples. Select the largest, scoop out the cores without cutting quite through. Fill the hollow with butter, & fine [dry?] sugar. Let them roast in a slow oven, & serve with the syrup. Lemon Butter or honey. Take 8 lemons, grate the rind of 4; the yolks of 12 - eggs, [&?] lb butter, 2 lbs pulv sugar, beat well, & boil about 1/2 hour, stirring constantly, This is considered by some to be fully equal to honey made by bees.
