Black cake. 1 lb flour, 1 of sugar, 1 of butter, 12 eggs, 4 lbs best raisins, 3 of currants, 2 large glasses wine, 1 of brandy, 1 of rose water, 1 lb citron, brown the flour. Fruit Cake. 1 lb flour, 1 of sugar, 3/4 lb butter whites of 4 eggs, yolks of 10, 1 gill brandy, 1 of wine, 1 of cream, 1 of molasses, mace,1 heaping table spoon of ginger, I did not have mace nutmeg, heaping tea spoon cloves, heaping table spoon cinnamon to taste, 3 lbs raisins, 2 of currants, 1 of citron. Brunswick jelly Cake. Stir together 1/2 lb powdered sugar, 1/2 lb fresh butter till perfectly light. Beat the yolks of 3 eggs till light. Sift 3/4 lb flour, & pour into the beanten eggs, butter, & sugar. Add a teaspoonful of mixed spice (nutmeg, mace, cinnamon,) & half a glass rosewater. Stir the whole well, & then flour your pasteboard, & roll it out, & cut out the cakes. It will be a soft dough but if you find it unmanageable, throw on a little more flour, roll 1/2 in thick.
