To Pickle Artichoke's 7 Take them before they are over grown or too full of Strings, pare them round 'till nothing but the bottoms be left, boul them 'till they are a little tender, don't let them more than simmer, when they are, cold, take good stale beer & white wine, & a great deal of whole pepper, but a small quantity of salt to them, they must be kept in a Barrel, it will serve in winter to use with baked meats or boyl'd Cook Jones Pickle Barberries Take your Barberries when they are ripe, let your Water boyl & give them half a dozen boyls, let your Pickle be of white wine & Vinegar, not too sharp, so keep them for your use Cook Jones Orange Pudding One Preserv'd Orange half a pound of sugar, as much butter beat it very well, Eleven Eggs the whites of six, Beat the Eggs, then beat all together, & put it in a Dish with Puff Paste about the Brim, let not your oven be too Hott Cook Jones Lemon Pudding Take the rind of two Lemons grated, & put it in a Mort[ar] with three quarters of a pound of sugar, and the same weight of fresh Butter, beat it very well, then grate Nutmeg into it, & put in Eleven Eggs, but six whites, work it very well & put in your Dish with the Puff Paste, half an hour is baking enough Cook Jones
