33 To Hash a Calves Head Boyl your head 'till it's almost ready, cut it in thin slices put it into a strong brown gravy, let it stew a little with an Onion stuff'd with cloves, & a small bunch of sweet herbs, then boyl your Morels & Truffles. Beard & Stew your Oysters in their own liquor, a few Mushrooms force-meat Balls & Artychoke bottoms cut in dice & boyl'd, & a sweet Bread if you like it, put all these ingredients into a Stew pan with the head, season it with Pepper, Salt, Nutmeg, & a little Lemon as you like it Royl the Brain with a little Sage & Parsly Chop'd, then Stir in a little melted butter, & put it in good Puff Paste & bake it in little Patty Pans, or fry it, instead of Butter mix it with three Eggs, garnish your Dish with Pitty Pattys, Oysters & Lemons Force Meat Take a quarter of a pound of lean Veal, half a pound of Beef Suet, half a handful of Parsley, & a Spray of Thyme, Shred all these together very small, season it with Pepper, Salt, & Nutmeg, pound it with the end of a roling Pin, 'till it be all of one colour, then break an Egg into, work it up like fine paste, & make them up in Small balls with grated bread Cook Chambers To make a White Pot Beat the yolks of 4 Eggs very well then strain them into a quart of Milk mix it well together & put into it sugar, Nutmeg to your taste Cut some very thin slices of white bread & lay them upon it, it must come to table in the Dish it is baked in, it must be baked in a gentle oven
