68 Savoy Biscuits Take seven New laid Eggs, whip the whites with a whisk & then put in the yolks, & whip them well together, then put in a pound of fine flour & the same quantity of fine Sugar sifted & a spoonful of Orange flower water, beat it well an hour with a pudding stick, & lay them abroad 'on white cap paper, put it in a brisk Oven. they must be cut off with a knife, before you lay them abroad you must dry your paper in the Oven. A Lobster Patty Take a large Lobster boyld, take out the legs and tail whole, cut them into pretty large pieces, pick out all the body & chine, take the marrow of a good bone, let the pieces of Lobster & Marrow be season'd with pepper and salt to your liking, lay them into your patty pan as you would any other Pye, when all is in, take as much sifted cloves as you can hold betwixt your finger and Thumb, & sprinkle over it, put on the lid & let it be bak'd, then have ready when you cut off the lid, the Spawn bruis'd fine & put into some gravy & melted butter, pour it hot into the pye and serve it up.
