(60) Night in a hot Oven, bake it that a Straw may Run through it, and when you take it out Role it up Very tight in a Cloth, and hang it up by one End to drain and when it is cold you may Use it. To Collar an Eell Skin your Eell, and cut up the belly, and bone it and Season it with a little Salt, White Pepper, and Cloves, and if you like it Shred a little parsly and Thyme very small & put into it, then Role it up very tight in a Linnen Cloth, & let it boil an hour, with a lemon peel in the Water when it is cold take the Cloth off it, and let it lye in the Water it was boil'd in.
