(69) To make Catchup. Take your large Slob Mushrooms, and bruise them very well with your hands, & throw a good deal of Salt over them and lay them on a Sieve for a night to drain, then squeese them between your hands and Strain the liquor through a Sieve, then put in a pan, and set it over the fire if there be five quarts let it boil down to three, and keep it well Skimm'd and put in half an Ounce of Whole Black & White pepper, Cloves, & Mace and two or three Shallads and let it boil 'till it has the flavour of the Spices then pour it of Clear, and when it is thoroughly cold, bottle it up.
