(103) To Pickle Mushrooms Brown Boil Mace, a little Allspice, a little Ginger a few Cloves, and a little Salt in Vinegar then put in your Mushrooms and let them boil till they Shrink, then put them in an Earthen Crock till cold then put them in potts and Cover them with the Liquour. N.B. Those for Catchup are as good as any and they must not be Wash'd. To Pickle Slic'd Cucumbers Take thirty large Cucumbers fresh pull'd and pare and slice them take twelve large Onions, and slice them, lay a layr of Cucumbers and a layr of Onions (Strewing Salt between)
