(106) To make a Potato Cake Take a quantity of Potatos, Grate them into Watter, then Strain them through a haire Sieve, then shift them in Water till they are Bleached put them into a linnen bag, to Dry, then Shift them through a Sieve, take 3 quarters of a pound of the Flour, 12 yolks of Eggs, Six Whites three quarters of a pound of White Sugar, beat the yolks to a Cream, and the Whites to a froth, beat altogether for two hours without Intermission, have an Ounce of Bitter Almonds pounded and Steeped in a Wine Glass of Brandy and Strain it in, half an hour will bake it Lydia Caldwell
