To Pickle Mushrooms Take yor. small hard buttons cut ye. dirt from ye. bottoms of ye. stalks wash ym. in salt water & milk & rub ym. wth. flannell yn. put ym. into another pan of salt water & milk & rub ym. till they are very clean yn. boyle salt water & milk wn. it boyls throw in yor. mushrooms & wm. they are boyld quick & white strain ym. & coole ym. in a cloth yn. let ye. pickle be half white wine & half vineger wth. slicd nutmeg ginger whole pepper cloves & mace yn. stop ym. up in glasses Colliflowers is don ye. same way To Pickle beetroot & turnips Boyle yor. beetroots in water & salt a pt. of vineger a little cutchenele & wn. they are half boyld put in ye. turnips being pared wn. boyld take ym. off ye. fier & keep ym. in this pickle
