(33) To Candy all sorts of things that you keepe in syrrups.Take them out of your syrrup & wash them well in warm water. & dry them moderately in your stove. then take your Candy pan with a good quantity of Clarified sugar. & boile it very well. before you put in any of your things. then put them in & let them boile & try them with your scimer that is full of holes. & blow it. if it fly thro your holes like fethers it is enough. then take it of the fre & with your scimer rub the Candy well against the pan sides. then take your fork & dip your things in the Candy. & so lay them upon your wiers to drain you must git all taken out of the Candy while it is hot. & let them lie upon your wiers untill they be cold. for ginger or Alecompany let your Candy stand till it be thick upon them. & power it altogether on your wiers. you may Candy a great meany things together one after another with puting every time to your Candy a pint or 2 of Clarified sugar & iust let it boile before you put in your things but ginger & Alecompany must alwaies be the last things you must not wash your oring Chips before you Candy them but lay them on a seive to dreap very well & for your Candid Lemon & Angelico. you may keepe in your box dry for a long time
