(34) To Candy Lemons & to pickle them Take the fairest Lemons you can git. & put them whole into a pickle of salt & water you must put in as much salt as will beare an Egg. & let them lie in it a moneth or 2. only take care your pickle be not too salt. & that it doe not mould. & when you take them out draine them well from the pickle then cut them in 2 long waies then throw them into water. & let them be shifted 3 or 4 times. then put them into your pan with as much water as will cover them. & boile them till you can take the meat out with your finger. then throw them into water & let them stand till the next day. shifting them 2 or 3 times in cleane water. then dry them from the water & lie them in [laires?] in your pan one upon another then cover them in Clarified sugar. & boile them very well in it. then let them stand in your pan 2 or 3 daies then boile them by a few at a time till they all looke cleare. then lay them in a tub or a pot & so keepe them before you Candy them you must wash them & dry them when you cut your Lemons if you please you may cut them in round rings before you Candy them
