(45) To dry Curran berries in bunches Take them & seed them with a pin in bunches & tie your bunches to a little peice of stick. after that take double refined sugar & melt it downe. & then let it boile & put them in. & give them a boile & let them stand till the next day. & lay them on glasses to dry. & dust them with double refined sugar. & set them in your stove to dry. To preserve white & rid Currans in bunches Take your Currans & seed them in bunches. & to a pound of currans put a pound of double refined sugar. you must wet your sugar in water. & then put to it halfe a gill of water & halfe a gill of Currans that is the Iuice of them & you must allow 2 ounces more sugar. & when your syrrup boiles you must put in your berries & then let them boile very well then put them into your pots or glasses. & so keepe them & paper them up. you must wet your paper & then clap it dry in a cloath before you put it on your currans. & then tie a lether on the top of your pots.
