(46) To make rid cleare cakes of Currans Take your rid Currans & strip them of the stalks into a pot & tie them with a paper & set it into a pot of water or a pan & let them boile very well about 2 houres. then take them of & put them thro a pulpin seive. & then you may mix it with the Jelly of goosberries or white Currans. if you make it with Currans when you put them in your pot put as many more white as rid or they will be too deepe a colour. then weigh your Jelly & set it on the fire. & give it a good heat. then put it to your sugar & to a pound of Jelly put a pound of doublerefined sugar put thro your wier seive & when your Jelly is very hot then put in your sugar & stir it very well. then take it of the fire & put it in your glasses or pots & set it in your [illegible] [Transcribed from a piece of paper pinned over the bottom of this recipe] 3 pound of sugar, one quart of watter Lett Boyle 40 minits then putt your jely to it & boyle for one quarter of an [hour?] Mrs Riggs
