(53) To dry apples without sugar Take fine large pippins & set them on a drippin pan & put them in your oven. & when they are pretty soft then nip them with your finger till the coare be loose b but besure you doe not breake the skin. then flat them downe with your hand & dry them in your oven. To dry white peer plums or any other white plums Take a pound of the plums & prick them very full of holes. then put them in cold water. & set them over a very slow fire till they be very soft for they will harden with sugar. then take a pound of very fine sugar bett & searct. & lay halfe of it into an earthen dish then drain the plums well from the water & lay them one by one. then doe the rest of the sugar over them & set them in your stove to dry. & let them stand a weeke & then take them out & lay them upon glasses to dry & when they are cleare dry take them out & turne them & set them into the stove to dry.
