(71) To make cleane cakes in winter with pippins & Lemons Take your Lemons & pare them & squeaze out the Juice into a pot. thet put your Lemons into a pan. but you may have about 5 Lemons to 20 apples pare your apples & put them in cut cleane from the Coares. then cover them with water & boile them very well. then let it run thru your Jelly bag & give it a good squeaze. & when you have got it all thru put in your Lemon Juice to it thru a muzlin bag & mix it together. then either weigh or measure it a pint is a pound. & to every pound take a pound of double refined sugar [bet] & put thru a wier seive. put your pulp into a cleane pan by it selfe & heat it very well but doe not boile it. then put in your sugar & stir it very well. & set it on the fire & just give it a good heat & no more. so put it into your glasses. & if you would make some of it rid. you must take a little Carmine & dissolve it in a little water & put it thru a muzlin rag into it & give it a heat after it is in so fill your pots or glasses & set them into your stove & doe them as other cleane cakes.
