(111) To make an oatmeale puddin as fine as a plum Cake Take 3 pints of new milk & boile it. then have ready your oatmeale which must be bett & searced thru a haire seive. when your milk boiles put in as much oatmeale as will thicken it & stir it all the while it is on the fire. then power it into a pot & let it stand till the next morning. then put in a pound & a halfe of Currans cleane washt & dried. then put in 8 Eggs but leave out 4 whites. beat them well with rose water & 3 or 4 spoonfulls of sack then put in a nutmeg grated & a pound & a halfe of beefe sewitt. shred small. if you please you may put in some Candid Citteran. or Candid Lemon. then butter your puddin pan it must be a deepe one so bake it. but put in about 2 pound of sugar. besure you shred your sewitt so small that it cannot be seene in it. when it comes out of the oven power some melted butter upon it. & strew sugar upon it so serve it up.
