(146) To make Cowslip wine Take 12 quarts of water & 6 pound of sugar let it boile an houre. then take it of & power it on 2 pecks of pickt Cowslips & the skins of 2 Lemons. then put it into your stand. & when it is cold squeaze out about halfe of the Cowslips & put in 6 spoonfulls of yest. besure it work well & ding it in 2 or 3 times & let it stand 3 daies then draw it of into your barrell & bung it up & let it stand 3 weekes then bottle it & cork it close. To make Goosberry wine of ripe Goosberries Take 10 quarts of water let it boile. & 2 pecks of ripe goosberries breake them very well with your hands & power your boiling water upon them. & let them stand all night. & take to every 2 quarts of liquor when it is strained one pound of fine powder sugar. stir it well in keepe it close up in a barrell. & let it stand 6 weekes then bottle it.
