(148) To make Curran & Rasberry wine Take your Currans & strip them. & breake your berries well. then measure your mash. & to every gallon of that put a gallon of hot water well boiled & skind & let it stand all night in the morning draw it of thro a strainer or haire seive. & to every 2 quarts of liquor put one pound of sugar. then put it into a stand with 2 spoonfulls of yest & let it work for 3 or 4 daies. then draw it into a barrell & let it stand a moneth or 6 weekes then bottle it if you would have it Rasberry you must put in halfe as many Rasberries as Currans mulberry wine is made the same way.
