(200) To make freash bread Take 3 quarts of flower & put into your bowle put 4 spoonfulls of yest 3 Eggs leave out one of the whites beat them very well with a little salt then take a quart of new milk a little warm. strain it thro a haire seive. then work it well with your hand. beat it & put it into a dish. & set it before the fire to rise. then bake it an houre & when it is cold then chip it. To pickle skate Take your skate & lay it in water a little warm to sack it cleane & take a wisp of straw & rub it very clean. & after you have got it very cleane from slime. boile it in salt & water. & when it is enough take it up & let it stand to cool & when it is cold mix a little of the pickle with as much Eleker & vinegar as will cover it.
