(210) To make a little plum Cake Take 2 pound of flower & a pound & a halfe of butter & halfe a pound of sugar. & rub your butter into your flower. & grate in halfe a nutmeg & put in 3 or 4 spoonfulls of light yest & as much Cream or milk as will make it in a right stifnesse. & set it before the fire to rise about halfe an houre before you bake it. then have ready washt & dried a pound of Currans so put them in & mix altogether & bake it. To make Court Cakes Take 4 Eggs leave out 2 whites. beat them very well as you doe for biskits then put in a little grated Cinamon. then put in halfe a pound of fine powder sugar put it thro your seive & put in halfe a pound of flower & mix it as you doe biskits. then melt a quarter of a pound of butter & put in it. & stir altogether. then put them into little pans or Cards cut like drippin pans & bake them when other things are [drawne?].
