To Make Curran Caks 35 Take a pound of sersed Suger mix it with a pound of dryed flower y.n take a pound of butter wash it well with rose water w.t your hands till it be Soft y.n put in half y.e flower & Suger have ready beaten y.e yolks of 6 Eggs 4 whits mix y.m well with your butter & flower & Suger by degrees working in y.e other flower & Suger w.n y.e oven is hot put in two Spoonfull of oringe flower water & a pound of Currands picked & dryed butter y.e Pans & fill y.m not - above half full Siev Some Suger on y.e top & lett y.e oven be preaty hot & keep up y.e lid you may drop some on paper if you please & if you like y.e taist of Spice you may put some in. To Make Allmonds Cakes. Take a pound of Jordin almonds blanch y.m wash & dry y.m & beat y.m very fine puting in some times a Spoonfull of rose water as you beat y.m to keep y.m from oyling w.n beaten fine take y.e whits of 4 or 6 new layed Eggs - beat y.m to frothy y.n add to part of y.e froth a pound of fine Suger beat it y.n it be very wet y.n mix in y.e almonds if you find y.m very [Sad?] mix some more of y.e froth in but take care not to make y.m too light y.n lay y.m upon wafers.
