Cowslip Wine Take 2 Bushels of pick'd Cowslip Flowers and put them into a Sweet Barrell then take 8 Gallons of Spring Water and put to it 16 Lb of Powder Sugar Let it Boyl an Hour and Scum it well then let it Stand till it Be Blood warm Then power it to ye Flowers and at ye same Time put in 14 Spoonfuls of Good Ale Yeast stir y/m well together and Stop ye top of ye Barrell w/th a Linnen Cloth let them stand till next Day then take 16 Lemons and put ye Juice into ye Wine w/th the Pealings of 8 of ye Close & let it Stand a Month, if cold Weather 2. Months then Bottle it of. If you want it to keep above a Year you must add 2 Lb of Sugar more to it you may also if you please add 2 Quarts of good Mountain White Wine when you stop again NB. When you pick ye Flowers Dont put in ye Little Round Seeds in ye Bottom of ye Flower,
