To make a Curry Take either mutton - veal - pork - chicken - Rabbit or Fish. Cut in pieces & fry to a good brown, then put into a saucepan with a good gravy seasoned with Curry powder to your taste - Boil seven or eight large onions, & rub them through a Colander, & add to the Curry. Let all stew gently until perfectly tender - add the juice of a Lemon or a Little cayenne Vinegar - Pisa To boil rice Wash half a pound of rice in four or five Waters - pick & strain it well.Have ready a saucepan containing three quarts of boiling water. throw in the rice while boiling hard - & let it boil for about fifteen minutes - Just before you take the saucepan from the fire throw in a cup of cold water which separates the rice. Strain through a colander & spread on a clean cloth for the steam to evaporate, & put into a Dish before the fire to Keep dry. Pisa Mrs MacMurrey.
