To make elderberry wine. To one gallon of water put two quarts of berries - boil it half an hour - cleanze it into a tub with a spigot fauset - & bet well in - let it stand till the next day - then draw it off, & measure the the liquor again & to every gallon put 2 lb of brown sugar, boil it three quarters of an hour, & Scum it - when about new - milk warm, put your barm to - a small quantity. When worked to a strong head, put the whole quantity together, let it work in the tub one night & one day. - then put it in the barrel & let it work out as you do ale - when a week old from the day it is made
