41 To pickle Mushrooms Rub your Mushrooms with a piece of flannel till they are white throwing them in Water as you do them then have some salt and water boiling on the fire put the Mushrooms in it and let them boil fast for near a qr of an hour then put them in cold salt & water for three days then dry them and put them in pickle made of half white wine & half white wine vinegar a little salt Mace and white pepper put on the tops & tie them close. 42 To make Ginger Bread 1/2 lb of Butter rubbed well into 1 lb of flour mix with it a table spoonfull of Ginger ditto mixed spices ditto brown sugar & a pound
