fleshy part cut into slices above 1/2 inch thick; score it across into small dice above half through one side of the slices scrape a little of the fat of bacon & put it into a saucepan with parsley shallots & mushrooms chopped cut very small adding a little salt & pepper - put them on a slow fire to fry a little & place this seasoning upon the cut side of the the gourd slices put the whole into a quick oven with a little butter or olive oil & when baked a little serve up the dish. - 131 4 Lemons juice & peel 1/4 lb Lump Sugar 2 glasses wine 2 of brandy 2 qt cream Whip all together as you do for syllabub Take a hair sieve put the froth into it as it rises until full let it stand all night to drain & turn it out an hour before it is wanted to set on table.
