done fermenting - stop it up. In about 6 weeks after [sack?] it off & filter the [lees?]. Put it again into your Cask after it has been made clean & dry adding thereto a qr of a Pint of Brandy to every Gallon. It will be fit to bottle in 6 months but it will be better if kept for twelve months in the Cask. Mrs. Jones Builth. Sept 20th To make Elder Wine Put 9 gallons of water to half a bushel of Elder Berries picked from the Stalks let them stand in the water two days then boil them till the berries begin to dimple which will be in a short time after they begin to boil - strain them thro' a Hop Sieve, but do not squeeze them, then put it into a Tub
