Apple Jelly Take seven pounds of ripe Apples [illegible] good boilers and if the [rind?] is red the [illegible] of the [illegible] be beautifully tinged cut the fruit into pieces without peeling [illegible] the cores only [illegible] the [illegible] and [yes?] add two quarts of water and boil till the [illegible] is a pulp which [illegible] into a jelly bag placed [over?] the fire and let it [illegible] when clear add 3 [oz?] of white sugar to each pint till the juice of a small Lemon [illegible] and the peel cut very [thin?] boil to a [illegible] stiff jelly strain [illegible] and [illegible] into [illegible] or pots, it will keep 2 or three years [Cambrion?] [illegible] 15 37 [upside down] Arbor Lodge [illegible] before taking off the fire and then add 2 oz of ginger, give it a good boil let it stand all night, in the morning boil it pare and slice 7# of Apples, 4# of Loaf Sugar Apple Ginger
