To Preserve Oringes my Lady Cursons way 77 with a fine grater rub of the Outward rinde of your Oringes and cut a hole in y.e stalk end so that you may take out y.e meat, afterward lay y.m in soke in spring water- 3 days shifting the water once a Day y.n boyle y.m in water till they be tender take out y.e meat and weigh them and take their full weight in double refin'd of which make a thin sirrup and let y.m boyle in it a little while then take y.m up in a bason and pour y.e sirrup upon y.m and let them stand 5 days. then put in the juice of 2 Lemons and boyle them till they be clear take them out and put them in glafses and cover them with jelley of pipins ----------- To make Lemon Cream -- -- ------ ---------- steep the rindes of 4 Lemons all night in a pint of - water' strain them and take the juice of 4 Lemons and the whites of [4?] Eggs, and one yold, beat y.m together and strain them; add to it half a pound of double refin'd sugar and a little oringe flower water 'and stir it over a fire till it be as thick as Cream ---------- ---------
