To make an Oyster Pye-- take 4 Quarts of Oysters and blanch ym. then bake one Quarter of a pound of fatt Backon sweet herbs and a little onion peper a little nutmeg a handfull of Spinnage scalded- chop all these together very small then work in the other Oysters whole with some grated bread then blanch a Quarter of a pound of ye. kernells of postatio nuts work these all together with some butter and put into your pye yn. put it in to bake with some sliced Lemon a Spoonfull or two of white wine Oyster Liquor then close it up and bake it when it is baked then make a Layer of butter and white wine juice of Lemmon and Oyster Liquor upon your pye strew these all over and send it to ye. Table- To Make Cherry Wine- stalk your Cherries yn. break ym. with your hand and mash ym. very small and let ym. stand 24 hours yn. press ym. in a hair bagg and to Every gallond of wine put 2 pound of Sugar at least yn. yun it up and when it is fine Bottle it up a Beer Barrell will spoill it- Mrs. [Tufftons?] way to make A Cream Cheese A Spoonfull of powder sugar in A Gallon of Milk and half a pint of Cream ye. Curd must not be broke at all but laid in ye. fat when ye. Cheese is a Week old lay it in Nettles or Ash Leaves betwixt two pewter Dishes-
