To make catch up--------- take large mushrooms and be carefull no water comes near them put them into an Earthen pot with a good quantity of salt amongst them work very well with your hands when you have done working them strain them through a Linnen cloth put [y.e?] juice into a sauce pan with mace peper cloves cinnamon and garlick so boyle it up to your taste. when it is cold bottle it up keep it close it will keep all the year: [y.e?] refuse of mushrooms will serve pick out [y.e?] spice and put into [y?] bottle. To make Orange Butter--------- take the rinds of 2 or 3 oranges boyle them very tender beat them very fine in a mortar and rub them threw a hair [sive?] then take a quart of cream let it boyle out on [y.e?] yolks of 10 eggs [y.e?] whites of 2 beat [y.e?] eggs very well together before you put them to [y.e?] boyling cream stirr all one way till it is a curd then they let [y.e?] run off through a strainer when it is cold mix as much of [y.e?] Orange as you think will make it taste as you like it sweeten it as you would have it.
