Mrs. Holdens Receipt to preserve Oranges for Tarts- Take Seville Oranges, & pluck of ye. pill in Quarters, boyle it in water till it is very tender, Shifting ye. water in the boyling, then Slice your pill not too thin& Carefully pick out all ye. Seeds, Skins, & Strings from ye. meat of your Oranges, & To every pint of meat and Juice, Allow a pound of Sugar, & To every pound of pill when when boyl'd You must allow a pound of Sugar, & a pint of pippin Jelley; Let ye. pill, Jelly, and Sugar Boyle a little, till you think ye. sugar is got into ye. Pill, Then put in ye. meat Then put it up for Use If You Can't get Pippins it will doe very well, if you make a Syrup of a pint of water and a pound of Sugar, To every pd. of pill and will keep better than ye. Jelly Tho' it does not look so well at first Two Doz. of Oranges will make enough To Last a Year with moderate Using-Mrs. Thorp Receipt To make a Portugall pudding- Take one pound of melted butter, Three quarters of a pound of fine Sugar, [batter?] fine ye. yolks of [12?] Eggs well beat 4 oz. of [Citron?] put a fine paste Under
