To Make Cowslip Wine Take to every gallon of water 2 pound of white powder Shurgur boyle it & scum it very clean then take it of (th)e fire. & coole it a.s Cold as wort when (th)e barm is just put into it put to every gallon 3 or 4 Spoonsfull of syrrup of Citron & Stir it about & put in so much barme as will set it a working to 12 gallons of water take a Strike & a peck of Cowslip flowers; bruise (the)m in a stone mortar & when it works put in (th)e flowers & as they rise put them down & when it hath done working tun it up a doing to it 4 quarts of Rhenish wine or white wine & 6 Lemons with their rinds on in thin Slices, put out (th)e Seeds & tye about (th)e Cork of (the)e barrel 4 graines of Ambergrease in a bit of Cambrick & at about a fortnight old bottle it put in a little lump of loaf Shugur in each bottle let not (th)e bottles be too full, and put (th)e corks but a little into (th)e bottles for 2 or 3 days. & then make them fast in
