A Receipt to make Spruce beer from Mayor Macdonald Newfoundland To a Cask containing 20 Gallons and 15L of Brown shugar, after the spruce is sufficiently boyled, let the shugar be put into a kettle full of the wort & Boyled over again till it is dissolved & then mix it with the remainder. In order that it may work properly rowl the Cask backwards & forwards four or five times, & whilst it is working keep it constantly full that it may throw out all the drop. When it has wrought three days let it settle for a day or two longer. When it will be fit for the Bottle & after it has remained in the bottles a fortnight it will be fit for use. NM If Molasses is used & the spruces branches instead of the spruce. 2 gallons and a half of the former should be put in & two arm's full of the spruce Branches.
