To make Coffee Miss Willis 2 table spoonful and a half of coffee before ground to 1 pint of cold water to boil ten minutes then pour a tea cup full out of the coffee pot & back again quickly several times to make the coffee sink - let it simmer for a few minutes after this operation and then let it stand by the fire to settle for a quarter of an hour pour it off into a Jug while the Coffee pot is cleared of the sediment - pour it back quite clear and heat it for use The coffee must of course be ground before it is put into the cold water -- An Irish stew Miss Willis Put the chops with a little onion shred into a stew pan & only just cover them with water Simmer them gently when half done add potatoes which should be whole and perfectly dry sprinkle a little salt & pepper over them and when the potatoes are done thro' the stew may be served up - It is essential that the stew pan be covered close & that not more water is put in than just to cover the meat as the steam is sufficient to cook the potatoes they contain so much fluid themselves - Harricoe Miss Willis The chops to be fried with a little butter in the stew pan - mix in a large teacup full of water, two teaspoonsful of flour with a little pepper & salt pour it over the chops - cut a little carrot & turnip small and stew the whole together very slowly for a full hour keeping the stewpan closely covered
