January 15 - 10 Recipes Apple & celery salad 1 cup. dried tart apple 1/2 c. celery cut in 1/2 in. pieces Mix [1/c?] mayonnaise dressing or with the following cooked dressing: 1 tsp. mustard 1 tsp. salt 1 tsp. sugar Few grs - cayenne yolks of 2 eggs whites of 2 eggs 1/3 cup hot vinegar Beat yolks of eggs slightly, add dry ingredients, then stir vinegar in gradually. Cook over hot water, stirring constantly, until mixture thickens. Cool, and fold in whites of eggs beaten until stiff. One half cup of whipped cream may be used in place of egg whites to make a richer dressing chopped walnuts or pecans meats may be added to the apples & celery. Iodine is infallible test for starch, turning it to blue.
