Rasberry Wine. Sache 3 gallons of Rasberries 2 of Canary one of white whine scoop the rasberries in wine [illegible] in an Earthen pott for 3 days, then strain it through pipperanes bagg, than take a pound of loaf sugar beat small only as few out of it a lump for each bottle fill them no higher than the necks, cork them down with new corks and it will keep a year. Rasberry or Gilliflower Wine Sache one Quart of Rasberries infuse them in a Gallon of water with a pound of sugar 24 hours, then strain it into a skillet, boil and [illegible] it clean than powder it tinto an Earthen [illegible] and when it's cold make a large boson toast and [illegible]it over with honey and yeast put it in, let it stand coverd over with a cloth till it hath [illegible] and after it is well cleared from the bottoms, put it into stone bottle well work'd, put a lump of sugar into each bottle keep it at least a forthnight before you drink it and if for present ofeput in mustard seed infused with honey. Damason Wine Takes a gallon of water and 2 pounds of sugar, boil it 3 quarters of an hour then put in 3 quarts of Damasons ston'd, let it boile a little while over a quick fire then strain it and when its cold put it in [illegible], bake a brown toast hard and knead it on both sides with best [illegible] put it into a [illegible] stop it clofe for a month, then bottle it. Itallian Pudding Take a pint of cream a ebony white loaf 10 eggs a beaten nutmeg butter the bottom a Dozen of [illegible]cut in [illegible] slices. Stew fine sugar over them and pour over them half a pint of carrot, and a little orange peel, then pur the pudding all over it, and it will be baked in half an hour, glaze the dish with past [illegible] and its very [illegible] pudding.
