Dumb Pudding. Take a Pint of the best Oatmeal, and boile it in new Milk and Cream, a little Cinamon, Nut-megg and beaten Mace, when its about The thickness of a hasty pudding, take it of and stirr in half A Pound of Sweet butter, 8 Eggs very well beaten, leave out Halfe the Whites, and put in 2 or 3 Spoonfuls of Sack, butter the Dish well, make puff past and lay round it, bake it not too much Marrow Pudding. Boile a Quart of Cream with a blade of Mace, Set it to be cold Then take 8 Eggs leave out half the Whites, and put to your Cream, then take Maple Biscak, or a Peney White Loaf, cut of the top and bottom and cut it into Slices, and lay a layer of that And a Layer of Marrow, then a few Raisons of the Sun, and So doe till you have laid 3 Quarters of a pound of Marrow cut, Then cut Orange, Lemmon and Cittern peel into thine Slices, And throw over it, Sweeten your Cream and Eggs, and put in 2 or 3 Spoonfulls of Sack or Orange flower water power it on The bread with puff past at the bottom, and round the Sides of The dish. Rice Pudding. Take half a Pound of Rice, boile it in new Milk, till it's Soft and tender, and Set it by to be cold, and cover it close To keep in the Steem, then grab in a Nut-megg, one peney Worth of Mace, 10 Eggs 5 Whites, 2 or 3 Spoonfulls of Sack Or Orange flower water, apint of Cream, Sweeten it to your Tast with good fine Sugar, and melt a pound of good fresh Butter, mix all these together with the Rice when cold, then Shread a Quarter of a pound of marrow, or Beef Suit fine, and Mix a little Sugar with it, when your Pudding is made Strew It on top, and it will make it look with a Icing, mix all the Ingredients well together, make puff past and lay it in the Bottom of the dish, 3 Quarters of a Pound of Currants will Doe for the quantity, pump your Currants before you put Them in but its Genteiler without Currants, Serve it. Rice Pudding. Take half a pound of Rice, finely beaten, boile it in 3 Pints of Cream, till it's thick, then put in Marrow or Beef Just a Grated Nut-megg, a little Rose water Sweeten and bake it In an Oven, not too hott, Serve it.
