Sett Custards. Boile a Quart of Cream with a blad of Mace, when Its boild, Set it to cool, then take 6 Eggs 3 Whites well Beaten, and put in a Spoon full of Orange flower or Rose water, 3 Quarters of a pound of good Sugar, Harden the Crust in the Oven and Stuff the corners With brown paper, prick the bottom with a Small Pin when you Set then in first, when they are enough Fill them.__.__.__ To Make Custards. Boile a Quart of Cream with a blad of Mace, beat 10 Eggs 5 Whites, take out the threads, and you must Sweeten It with fine Sugar, put in the Eggs with a Sponfull of Sack, the Same of Orange flower water, then put in The custard Cupps, let them but just boile up in the Oven, and if your boile the Eggs in Cream all together Then you may put them in the Custard Cups over Night, and they will be fitt for use next day.__.__ Rice Custard. Boile a Quart of Cream with a blade of Mace put to It boil'd Rice well beaten, with the Cream, Stirr ir well, And let it boil all the time its on the fire keep it stirring When its enough take it of, Sweeten it to your tast, Put in a little rose water, let it stand to be cold, then Serve it.__.__.__ To Make Cheese Cakes. Boile a Quart of Cream, beat the yolks of 2 Eggs well, and when the Cream boiles put in the Eggs, Set it on Again boile it till it comes to a crud but not to a Whey, blanch Almonds and beat them, 2 or 3 handfull Of Orange flower water, and put them into the Cream With a little Naple Biscate and grate Cittern and grate It Small, with Musk plumbs, ground in the Sugar, Sweeten It with fine Sugar to your tast, role them out then bake Them not too much.__.__.__
