To Make Cheese Cakes. Take 2 Gallons of Milk turn it with Runnet Tahat it may be a tender Crud, when it come, and Gather it, run it with a thin Strainer, press out all The whey very dry, and beat the Crud with Sweet Water very well, and put to it 12 Eggs 6 Whites, Season it with Cloves, Mace, and Nut-meggs, a little Salt and rose water, with what Quantity of Currants you think fit, Sweeten it to your tast With fine Sugar, with a Musk [plmbe?] ground in it Bake them as the other. For a Pasty.. Take fine flower 2 Eggs 3 Spoonfulls of Orangeflower Water or Rose water, and fair water mixt together As much as will make it into a Stiff post, role it Out thin, put in the butter by bitts, then role it out Again till all the butter is in, lay them one upon Another, role out the crust, and half an hour Will bake it put a little fine Sugar in the crust If you please. Spring Garden Beefe. Cut a piece of Beef into thin Slices lard it thick And well with Bacon, put it into a pott with a little Mace, Pepper and Salt, with a Bay leafe or two a Bunch of Sweet herbs an Onion, when its baked Take it out and drain it well form the Gravy place It in another pott fill it up, and cover it well with Clarrified butter, let it ly for use.
